2 cups cooked and cooled rice (preferably long-grain like jasmine or basmati)
1/2 cup bell peppers (red, green, or yellow), finely chopped
2-3 green onions (scallions), chopped

2 tablespoons vegetable oil or sesame oil
1 cup mixed vegetables (e.g., bell peppers, carrots, peas, corn, broccoli, and green beans), diced
3-4 cloves garlic, minced
1-inch piece of fresh ginger, minced
2-3 green onions (scallions), chopped
2-3 tablespoons soy sauce (adjust to taste)
1-2 tablespoons oyster sauce or vegetarian stir-fry sauce (optional)

Soaking Rice
2 cups cooked and cooled rice (preferably long-grain like jasmine or basmati)
Reduce the heat to low, cover the pan, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
Cooking Rice
Heat the vegetable or sesame oil in a large wok or a wide skillet over medium-high heat.
Add the minced garlic and ginger. Stir-fry for about 30 seconds until they become fragrant, but be careful not to burn them.
Add the diced mixed vegetables to the pan. Stir-fry for 3-4 minutes or until they are slightly tender but still crisp.

Serve your vegetarian fried rice hot, garnished with extra chopped green onions or a sprinkle of sesame seeds if desired.
Heat the pot on low heat for about 10-15 minutes. This will allow the flavors to meld and the rice to become aromatic.
